Lexi’s Rainbow Colored Seafood Chowder

Have you ever heard you’re diet should consist of fruits and veggies the color of the rainbow?? Well if you haven’t heard it - now you have. I tried to do so by incorporating an array of diff color veggies into my fish and seafood chowder. As you might have noticed, i don’t follow recipes or precise measurements, so I’ll share the recipe as best I can - but just try to find the amounts and tastes that suit you when re-creating my foods.

Most of my ingredients are from trader joe’s….

1 lb of frozen cod (defrosted) and cut in cubes. Or use anohter white fish

1/2 package of trader joe’s Seafood Medley (scallop, shrimp, calamari)

3 leeks, cleaned and white parts chopped up.

4 cloves garlic, minced

2 shallots or 1/4 of an onion, chopped

chicken or vegetable stock (32 oz)

Nice sized pinch of Saffron threads (optional)

Purple potatoes, Yukon and Red (about 2 of each they’re small) diced

small can of diced tomatoes

celery and carrot diced

couple little pinches of herbs de provence, salt and pepper to taste

parsely and lemon to taste (optional)

Sautee the garlic, leeks, onion/shallots until fragrant and translucent. Also saute carrots and celery until they begin to soften. Add the 32 0z of stock and bring to a simmer. Next add the potatoes, can of tomatoes ,and saffron and herbs de provence and let it simmer for about 30 mins. Last add the fish and seafood. They only need to cook for a matter of minutes, so put them in last. Taste and flavor w/ salt and pepper, even a splash of fresh lemon juice and fresh parsely to top it off. Oh and of course - I add hot pepper flakes for some heat — It wouldn’t be a HOt Tongue recipe without some spicynesssss enjoyyy! xx

I’ve recently started eating “clean”, cutting out mostly all processed foods and eating tons more fruits and veggies. I need some ideas of something yummy to make tonight for dinner!! What should I have??

““But perhaps the most alarming ingredient in a Chicken McNugget is tertiary butylhydroquinone, or TBHQ, an antioxidant derived from petroleum that is either sprayed directly on the nugget or the inside of the box it comes in to “help preserve freshness.” According to A Consumer’s Dictionary of Food Additives, TBHQ is a form of butane (i.e. lighter fluid) the FDA allows processors to use sparingly in our food: It can comprise no more than 0.02 percent of the oil in a nugget. Which is probably just as well, considering that ingesting a single gram of TBHQ can cause “nausea, vomiting, ringing in the ears, delirium, a sense of suffocation, and collapse.” Ingesting five grams of TBHQ can kill.””
